Each spring, from early February to mid-March, Ohioans collect the sap from the maple trees and turn it into more than 100,000 gallons of maple syrup, using a process that has changed little since Native Americans taught it to the first Western Reserve settlers.The area celebrates this bounty with pancake breakfasts, maple sugar festivals, and other maple-related events.
